I would like to backup my contacts, AK Notepad, messages, photos, etc. (basically everything on my phone) to my desktop.  Can anyone tell me how to do this?  I have been reading some of the threads about KIES but I am so confused.

Download "Android Manager WiFi" from the Market place.  You also have to download the client for your PC. Your Captivate connects to your computer through WiFi and you can syn all the items that you have listed.  I use it and I love it.

if you are rooted you can get titanium backup and run a backup, then copy the titanium backup folder to your pc and everything will be there. but you may not be rooted

Sorry, I couldn't verify if memos are backed up maybe another user can answer that.

For SMS Backup,  I recommend VeryAndroid SMS Backup. It is a smart andriod sms backup software that can copy and backup sms on Android phone to computer, restore sms backup file to any android phone, and also send messages or chat with a friend on computer directly, exactly the same as that you do on your android phone.

when you ask about backup can you'll state if you'll rooted or not because it make a different on the answer,i'm not a pro but i will try to help the best i can......

If your rooted you can use root explorer,I fyou know where your files are you can just copy and paste onto a folder on pc after mounting
