OK, I might have gotten rid of my tethering issue.  I've been turning on and off WiFi for awhile since I did this, so we'll see.  But here is what I did:

have WiFi on then:
1. go to settings > wireless and network > tethering and portable hot spot
2. Mobile AP settings
3. Turn on mobile AP

It will pop up with 2 messages, 1 about you being on WiFi and if you want switch to 3g, then a message that you need the att service to use.

4. turn off mobile AP.

So far no error when switching.  I  need to go grab my usb cable and connect to the pc and see if it starts back up.

So far this has worked for me( 1 hour). I was confused as to how I should answer the pop ups, but tried both yes and no and so far, so good. Thanks.

Oppssssss......

Spoke too soon.  Just happened again and I wasn't even attached to anything. It happened when I turned my Wifi back on.

It seems to be an off and on issue.    I went days without having the issue then all of a sudden today I've seen the error about 5 or 6 times appearing when I'm getting texted.   Jeez.

Mine still hasn't come back.

I've charged it(although it would be totally awsome if the battery lasted since my post).

Rebooted.

Although I can't honestly remember if i hooked it up to my pc or not.....

I'll try that and back to you.

Have any of you tried to go through those steps again to see if it stops again, even momentarily?

I was having this problem, as well...it seems the only way to resolve it is to do a Factory Reset". 

Phone is working great, ever since the reset.

Not liking the battery life, or lack there of, after the factory reset.  Not sure if it's because of gingerbread or some settings I've missed, since having to start over fresh.

After getting the Tethering error over and over the other day, I finally did a Factory reset. 

No problems since, 48 hours and counting.  I've got to update my contact list and add other phone numbers and addresses but that's not that big a deal for me.   I copied my internal SD card to my computer desktop and was able to reload it.  I made a list of all my apps and loaded, those too.

Still need to check the GPS, though.

The method (of banishing the Tethering message) that worked for me was to reconnect to Kies Mini.  There is no further update of course.  (KEY STEP!) On the phone exit from Kies Mini with the HOME key, NOT the back key.

The message has been gone for two days now even with the phone going in and out of the dock often.  I hope it works for others; factory reset is no joke.

Just found this non-reset method to fix the tethering issues.  Don't know if it works, but I'm giving it a shot.

Many people have been receiving a Tethering Error Pop Up message on their Samsung Captivate mobile devices after updating to the 2.3 Gingerbread. I myself have been having this problem every time I unplug my device from a charge.

Here is how I fixed the problem without having to do a factory reset.

Plug the device into your computer (I'm using a laptop running on Windows 7 64-bit) via micro usb cable, next you will see "select USB mode"
don't select any option, instead hit the back button which will take you to your Home Screen

Now select settings --> wireless and network --> tethering and portable hot spots --> check USB tethering.

Now wait for Windows to install the device driver Samsung Android USB NDIS Network Device. Once the drivers are installed just disconnect your device from the computer. That's it, problem should be solved and no factory reset required.

Hopefully this will work for you too, please let me know how or if it works for you.

A little over a month ago I rooted Gingerbread and deleted the tethering app.    Problem solved.
